Impermanence Single Origin Coffee
Origin: 100% Single Origin - Villa Lucía, Santa Barbara, Colombia. Andrés Carmona. Natural coffee fermented on its cascara.
Decription: The beauty of single origin has escaped us in our first year of making coffee. Yes, coffee blending is a fun way to deliver precise flavor profiles and is an art in and of itself. And yet the linear quality of a single lot is the product of only the earth in which is grows, the bugs that ferment it and the roaster deft touch. We aim to highlight that with Impermanence.
I traveled down to Colombia this summer to work with Andrés on this spectacular coffee. We selected summer harvest beans and treated the cherries like fine wine, natively-fermenting them in their skins at higher temperatures openly and then under anaerobic controls during bacterial ferments.
The results are esoteric, and the native yeast produced uncanny flavors and aromas that were unlike other anything I’d had. Explore the air and dirt of Antioquia with us. Hope you love it as much as I.
Tasting Notes: Pinot skins. Milk tea. Creamy chocolate.
