Vivid Portents of Doom Golden Sour with Pinot Gris Grapes

This is what the darkness took from us. Its the portal to our wildest dreams and the prophetic clues to utter calamity. And yet we kneel at the temple of our hauntings. Another expression of our vinous complexity, this golden sour aged for 3 months in our house puncheons with our blend of brettanomyces and bacteria, before re-fermenting upon 1lb per gallon of pressed Pinot Gris grapes. The blend of citric-forward acids, strawberry esters and ripe orchards make this a quaffable exploration of fruit.

Once we glowed so brightly. Then the tides of hell raised. The winds spun and twisted our spines. The waves beat upon our backs and shattered bones. The skin was pulled from our skulls. The vibration of great change burst our veins and spilled our blood. But upon the scars of such morbidity, lay the sanctuary for recompense. The reminder of such a great light that once was, and shall be again. Made from a decoction of Pilsner malt, and finished with American hops. Made as a reminder that we make beer because it is embedded in the canvas of our fondest memories.

Oasis of Imagination Sonoran Lager (Collaboration with Arizona Wilderness)

Brewed in collaboration with Sinagua Malt and Arizona Wilderness Brewing, this 6th installment of the Ambient Terrain Rustic Lager Series acts as a celebration of the American Southwest. Here, we’ve re-interpreted the Mexican lager with all American ingredients including barley and blue corn grown and malted in Arizona and an experimental variety of neomexicanus hops that are native to the Southwest. A true representation of a terroir rarely seen in beer, providing far-out notes of crisp cracker, late summer foliage, hewn oak, young coconut shells and un-ripe pear.
