Saison Ale with Honey, Grains of Paradise, and Cacao Pulp
The subtleties of expression twist through the branches of time and enshrine understanding in the matrices of their growth. Peer through the vine to solve its complexities and listen to its credence of freedom. Reconcile reality, express individuality and conquer the doubt. For this Saison we again teamed up with The Eighth State Brewing and it was only natural to try to reach for something new. We took a base of @RiverbendMalt and whirlpooled it with a hearty dose of Citra and fresh cracked grains of paradise before cofermenting it with a blend of our house saison and IPA yeasts. In the fermenter we added wildflower honey and 0.75 pounds per gallon of the pulp from cacao fruit. The sum is a poetic expression of fresh passionfruit and lychee, peach with cracked pepper honey, and bales of hay all finishing pleasantly tart and bone dry.
