White Sour Ale with White Chocolate and Peaches

It was here in this cavernous void. Where the walls grew high and the light seemed to go extinct. And now where the cracks have settled, and the radiance of evolution peaks in. A space of infinite potential. Our bond with French Broad Chocolates is forged from somewhat discombobulated origins, lost in thought, and free from our monotonies. Being lost is often, how you are found. With the incoming Peach season, we decided to try our hands at forging some of our favorite things – white chocolate and sour peaches. This Golden Sour Ale is composed of two different peach sour ales, 55% in wine barrels for 15 months aged on second-use peaches. 45% aged in oak foudre for 12 months and refermented with fresh peaches. We then aged the blend upon French Broad’s house made Cocoa Butter, with a small dose of Cocoa Nibs and Vanilla Bean. Loaded with sugared peach rings, creamy peach filling, vanilla wafers dipped in peach white mocha.
