A rogue faction. The deviation that keeps us above the surface. From deep within the walls of our torn and tattered memories, we found this metamorphosis so damn necessary. This year’s fresh hops included a massive early harvest of Cashmere from our friends at Hop Head Farms in Michigan. Driven down here and used primary for a massive dry hop in our annual DIPA, we pulled a luscious dose of these uniquely pineapple, lime and spice-driven hop flowers over to our experimental brewery and whirlpooled a simple pilsner base among it. The beer was fermented low and slow with our house lager strain, and spunded to produce natural carbonation. The result is one of our more powerful non-dry-hopped lagers ever, rife with fresh strawberry lime cooler, exotic spice cake, and fresh honeydew slices.
